dinner

I am on a two-night streak of making dinners that are A) not pizza or hot dogs, B) made from ingredients (not frozen, canned, or boxed), and C) enjoyed by the whole! entire! family! Sadly folks, this is blog-worthy.

Last night I made this pasta salad and we took it up to the pool. Jon declared it one of his favorite meals I've ever made (granted, the poor guy was starving because he worked late and ate lunch early). The kids ate every bite, it kept well for leftovers, and it was crazy easy to make: definitely a keeper.

Tonight I made Pioneer Woman's Marlboro Man Sandwiches. Quite possibly the first time I've made beef and not just tolerated it but actually loved it. (Perhaps it was the stick of butter? PW is the Paula Dean of the internet, love that woman.) I have a feeling that with a houseful of boys, this recipe will serve me well over the years.

If you ever have leftover meat from those sandwiches, put it on top of fries (frozen TJ's is the way I do it) with a little gorgonzola. Holy moly.

Mainly just eating gluten-free, soy-free, dairy free nasties that I come up with. The Living Without magazine has saved my life lately. And the crockpot.

Oh, another thing to do with leftovers is throw them in an old ice cream bucket (the big plastic ones). When the bucket is full you reheat it into a stew. My friends used to do this. Though it could be icky if you put the wrong leftovers together...

Last night we had Italian Chicken and White Beans from the Betty Crocker cook book - super easy and FAST - basically cut up chicken breasts, two cans of northern white beans, a can of sliced black olives, a jar of sundried tomatoes, some minced garlic and some dried basil. I can't wait to have it again. It literally only took 10 minutes.
